Nice piece of salmon cut into inch and a half blocks cross the fillet
Chris bacon
Since sliced cabbage or Brussels sprouts
Thin sliced apples
Thin sliced red onion
Cranberries
Lemon zest
Small amount of lemon juice
Salt-and-pepper

Dressing:

Olive oil
cider vinegar
Dijon mustard
maple syrup
salt-and-pepper
Fresh thyme

Directions:
In a cast-iron skillet cut the bacon and two large pieces and cook until crisp. Remove the bacon and keep the bacon fat. Score the skin side of the salmon add salt-and-pepper and cooked skin side down first until the skin is VERY crispy and then turn once to finish cooking. Make the dressing that will go on both the salmon and the salad. Add all the salad ingredients and toss with the salad dressing. Once the salmon skin is crispy and golden on both sides plate the salmon and add the salad on top and drizzle on more salad dressing.
