2 links Chorizo sausage
1/2 Diced red onion
3 cups Par-Boiled new potatoes diced
One third stick of salted butter
Dash ancho chili powder
Pickled jalapeņos diced
Fried Eggs

Hollandaise sauce (see multiple recipes ) with lime zest, a little lime juice, ancho chili powder and Cayenne pepper.

Use a 1 to 3 ratio of Chorizo sausage two potatoes for this dish. Remove the Chorizo from its casing and brown in a cast-iron skillet until crispy. Remove and drain on a paper towel. Add the butter to the skillet with the chorizo oil and cook your potatoes until crispy and brown. When the potatoes are almost done and nice and crispy add your onion. Cook a little longer until onion is clear. Add your ancho chili powder (to taste) and add the Chorizo back into the skillet and cook for three to five more minutes. Plate it up, add your fried eggs and pour the holidays on top. Sprinkle with diced pickled jalapeņos.
