One 4-pound chuck eye roast or other chuck roast
salt and pepper
2 tablespoons extra-virgin olive oil
one bag of dried porch mushrooms
12 ounces diced bacon
1 large onion, coarsely chopped
3 garlic cloves
3 cups beef stock or low-sodium broth
2 cups red wine any thing you have
, parsley and carrots
potatoes if you like
throw it all together in Nanny's yellow Dutch oven - that she got as a wedding gift in 1950
1 1/2 pounds parsnips, peeled and cut into 3/4-inch chunks
2 tablespoons water

Throw it all together in the Dutch oven and cook slow and low
for about three- five hours. The meat will fall apart. If the meat is bigger cook longer, sometimes I braze the meat on the stove before putting it in the oven..
