1-1/2 c. milk
1-1/2 c. light cream
4 T. flour
2 T. cornstarch
3/4 c. sugar
3/4 tsp. salt
3 egg yolks, slightly beaten
1-1/2 tsp. vanilla
1 baked pie shell

Directions:
Scald milk and cream in double boiler. Combine the next 4 ingredients and mix thoroughly. Add to the scalded milk and cook until thick and smooth, then cook 15 min. longer. Stir a small amount of mixture into beaten egg yolks and return to double boiler. Cook a few min. longer. Cool and add vanilla. Pour into baked pie shell. FOR BANANA CREAM PIE: Slice 2 bananas into pie shell, add cream mixture. Top with meringue. FOR COCONUT CREAM PIE: Add 1/2 c. shredded coconut to cream mixture. Pour into pie shell. Top with meringue. If desired, sprinkle 1/2 c. coconut on top of meringue before browning.
