1/4 lb. butter 1/3 c. flour
1 c. light cream salt and pepper to taste
dashes of Tabasco & nutmeg 2 1/2 c. chicken broth

4 c. large cubed turkey 2 Julienne cut pimientos (opt.)
1/2 lb. mushrooms, sliced or 1 to 1/2 cans of mushrooms (opt.)
3 T. dry sherry (opt.)

Directions:
Directions:
Heat to make a cream sauce of the first tier of ingredients. Add the turkey, pimientos,and mushrooms. Heat thoroughly just until it reaches a boil. Stir in sherry and serve over rice, mashed potatoes, toast, etc. It thickens upon standing,
Recipe can be doubled.
A 13-14 lb. turkey yields @ 3 qts. of cubes.
