Ingredients: assorted meats of your choice, such as: chicken legs, thighs Italian sausages meatballs pork chops braciole (see recipe in the beef section) veal whatever!
olive oil chopped onions chopped garlic tomato paste (one can per each 28 oz. can of tomatoes) canned crushed tomatoes canned whole tomatoes wine (use whatever you like) salt black pepper crushed red pepper oregano about 1/2 teaspoon sugar onion powder garlic powder fresh chopped parsley and /or fresh chopped basil

Directions: Heat a large pot/Dutch oven. Add about 1/4" olive oil to the bottom of the pan. Working in batches, start browning whatever meats you are using. When all the meats are browned, add chopped onions and garlic to the pot. Stir occasionally until cooked. Then add the tomato paste and cook until the paste deepens in color, stirring frequently. Fill the empty tomato paste cans with wine, stir that wine into pot.
Then add the crushed tomatoes. Fill the empty cans 2/3 to 3/4 full with water. Add that water. Smash the whole tomatoes with your fingers and add them with all juice to the pot. Fill that can about half full with water, add that to pot. Stir to blend all ingredients. Add all remaining ingredients, to taste. Cook over medium low heat for an hour or two, stirring occasionally.
Then add back all the browned meats, Continue to cook for another hour or so. |
