10-12 cups water
Fennell Stalk & 1/2 Fennell bulb
4 chicken breasts (from seven grain)
4 carrots
1 large onion + 2 tsps. olive oil
salt & pepper
2-3 garlic cloves
cilantro stalks of one bunch (Keaton didn't know)

Curry:2 T. fresh chopped ginger
2 cloves smashed garlic
2 onions sliced (not chopped)
1 tsp. butter & 1 T. olive oil
1 T. curry powder
1 1/2 T coriander powder
2 cans coconut milk

Directions:
Stock:Bring to a boil with all ingredients and let simmer. The longer the better-2 hrs at the least.

Curry: In a wok on medium heat add all ingredients. Cook about 4-5 minutes then add 3 red/yellow peppers sliced. Cook another 5-7 minutes. Add curry powder & coriander powder. Remove 3 chicken breast from stock(can do this early so that it cools to cut). Add onions and peppers. Add 2-3 cups stock. Add the coconut fat of coconut milk(do not shake so the fat stays separate from the coconut water). Simmer on low about 20 mins. Add salt, pepper and more seasonings to taste. Serve with fresh cilantro and rice.

The remaining stock becomes a great chicken soup-add noodles and cut up the last chicken breast.

The coconut water becomes a great smoothie base-add fruit and ice-blend.
