1-3 cans organic black beans or other beans
Roasted peppers plus jalapeno peppers chopped
organic tomatoes
1/4 cup salsa
Red onion, chopped
1/2 cup organic corn (off cob or frozen that's cooked)
Cilantro, chopped
1 lime sqeezed
1/4 cup extra virgin olive oil
1-2 T. light mayo or sour cream or Vegenaise
1 or 2 garlic cloves chopped or shredded
hot sauce to taste
salt & pepper to taste
All purpose seasonings or other seasonings to taste

Mix all together and eat with Whole grain tortilla chips and veggies.
