2 c sugar
1 c oil
3 jumbo eggs
3 c flour
1/4 t baking powder
1 t soda
1 t salt
1+ t cinnamon (I use extra)
2 c grated zucchini
1 c chopped walnuts
2 t vanilla

(Optional is raisins)

Directions:

Mix together ingredients as listed. Put into greased & floured pans. Bake 350º 50-55 mins (40-45 mins for smaller pans)

*This is a double recipe
Mom made this a lot and always got a lot of compliments. I have made this often as well and had the same results. You can make with or without nuts, with or without raisins or combine. Great way to use up the large zucchini that might be too tough to eat in another recipe.
