2 sticks of butter
1 cup of granulated sugar
2 eggs
1 cup of ripe mashed bananas
1 and 3/4 cup of unbleached all purpose or cake flour
1/2 tsp. salt
2/3 tsp. baking powder
5 tbsps. buttermilk
1 tsp. pure vanilla extract

2 9 inch cake pans
2 tbsps. butter
1/4 cup flour

Directions:
1. Preheat oven to 350º.
2. Use 1 tbsp. of butter each to completely coat both cake pans. Now divide the flour in half and put in the pans. shake the pans around to coat with the flour. Set aside.
3. In a large mixing bowl and with the electric mixer, cream the butter and sugar on high, until light and fluffy. Add eggs one at a time, beating well on medium speed after each. Add the bananas and stir with a spoon. Set aside.
4. In a separate medium mixing bowl, sift all dry ingredients together.
5. Now add the dry ingredients 1/4 at a time with the electric mixer to the wet ingredients in the large bowl. Mix until completely mixed together.
6. Add the buttermilk and vanilla. Mix for one minute.
7. Bake for 25-30 minutes on the center rack of the oven or until a toothpick comes out clean. Cool on racks for 10 minutes. Remove cakes from pans and cool completely.

Frost with Cream Cheese Frosting (In the dessert section)
