Ingredients: ½ c/(1 stick) Crisco or other shortening/mix 2 Eggs 1 tsp. Vanilla Rind and Juice from an Orange (optional) 3 Ripe Bananas, mashed
2 Cups Flour 1 tsp. Baking Powder 1 tsp. Baking Soda ½ tsp. Salt
½ to 1 Cup Nuts, Raisins, Craisins, Chopped Apricots (optional)
Mix the Flour, Baking Powder, Baking Soda and Salt. Set Aside.

Directions:Use a 9 x 5 Loaf Pan - Grease and flour or spray with Pam or Bakers' Secret Spray.
Preheat Oven to 350 degrees In a large bowl, cream butter (shortening or whatever you use). Add Sugar and mix well. Add eggs. Add Vanilla, orange rind and orange juice, if used. Mix in the bananas.
Add dry ingredients and mix till blended. Add nuts (and/or raisins, apricots, etc.
Spoon into loaf pan. Smooth out.
Bake 45 to 55 minutes at 350 degrees. Test with toothpick
I remove from pan immediately. While warm, I brush a little maple syrup (or corn syrup if you don't have maple syrup or orange marmalade or apricot jam or whatever) to glaze the loaf. I used maple syrup on the one I made for you. |

Notes: I often have overripe bananas and I freeze them in a baggies. I put three in each bag and then defrost them. But ripe bananas do make a difference.
Better the second day. I made those loaves on Friday and kept them in cool basement. They also freeze really well.
I used Crisco in the breads I made but have made them with butter or half butter/half vegetable oil when I didn't have Crisco. I buy it at Christmas to make Oatmeal Cookies but don't buy it again during the year once I run out. Granny always used the grated rind and juice of an orange in hers, but I don't usually have an orange when I decide to make it so I splash in a bit of OJ. I used about 1/2 cup raisins and 1/2 cup of chopped nuts in the loaf. But I've done other things too. No raisins, just nuts; Craisins, Snipped dried apricots with or without nuts, etc. You just adjust the baking time depending on how much moisture is in the mix. But 45 min to 55 min usually.
