1 can (19 oz. or 2 small ones) pineapple chunks drained save the syrup.
1/4 cup white sugar
2 Tbsp. corn starch
2 chicken bouillon cubes
1 cup hot water
2 Tbsp. vinegar
2 Tbsp. soya sauce
1/2 tsp. salt
1 medium green pepper cut in strips
1 1/2 cups of cooked chicken cubed ( I usually cook boneless, skinless chicken breasts; maybe 3)
2 Tbsp. butter
1 (16 oz.) can chow mien noodles ( I have tried a few yrs. ago and I can only buy them in a bag) that's what I use.

Preheat oven to 350 degrees.
Combine sugar and cornstarch in sauce pan, stir in pineapple syrup, add bouillon cubes to hot water stir till dissolved, then add to pineapple mixture, along with the vinegar, soya sauce and salt, heat on medium heat and stir until thickens. Add pineapple, green pepper, chicken and butter. to a greased casserole dish, add the sweet and sour sauce, top with chow mien noodles. Bake for 25 mins. Excellent served with fried rice or steamed rice.

My Granddaughter Emily Anne Stewart (Suzanne and Larry's daughter) loves when I tell her I made this. When she is coming home from B.C. she said Nana the night of my arrival, I either want your Sweet and Sour Chicken or your Italian Spaghetti Sauce. I hope who ever makes it enjoys the recipe; as much as we do. Enjoy!
