Angel Food Roll-up Recipe

1 Box 2-step Angel Food Cake Mix
8 Oz Cream Cheese
1/3 cup sugar
1 tsp vanilla
Large Container Cool Whip Whipped Topping
Strawberries (fresh) / diced or sliced

Directions:
Directions:
Line a jelly roll pan with waxed or parchment paper and set aside

Mix angel food cake mix according to package instructions. Pour into the jelly roll pan and bake until lightly browned. Approximately 15 minutes. Remove from the oven and let sit about 10 minutes.

Remove cake from the pan and dust generously with powered sugar. Cover with another sheet of waxed or parchment paper and gently roll up. Let sit until completely cooled.

In the meantime, mix the cream cheese, sugar and vanilla until smooth. Add the 8 ounces of Cool Whip (reserve the rest) and blend with the cream cheese mixture.

Roll out the cake, remove paper and spread cream cheese mixture on top. Place strawberries on top and roll back up, removing original paper as you roll. Top with a few whole berries and remaining cool whip and refrigerate until ready to serve.

I got this recipe from a girl I used to work with, Lynda Eades and my family loves it. It's light, refreshing and doesn't feel like you just ate 1000 calories.
