2 cups butter (4 sticks)
1 lb sharp cheese, shredded
4 cups White Lily flour
1/2 tsp salt
1/2 tsp red pepper
1/4 tsp paprika
1 cup chopped pecans or walnuts
3/4 cup chopped craisins (pulse in food processor)

Cut butter in chunks about 30 minutes before making wafers. Beat the butter and shredded cheddar cheese at medium speed with a mixer until blended. Slowly add White Lily flour and remaining ingredients that have been sifted. Beat until blended. Add craisins and mix. Then add nuts and mix. Dough will be sticky so cover and chill an hour. Remove from the refrigerator and shape dough into 4 logs. Roll in wax paper and chill at least 8 hours if baking immediately. Rolls can be frozen (freeze in large zip-lock bags) or kept in the refrigerator for a week. Cut in 1/4 inch slices. The wafers bake perfectly. Bake at 350º for 14 minutes. Check because ovens vary. Turn baking sheet around after baking for 7 minutes.
