2-1/4 Cups Boiling Water
1-1/2 Cups Oatmeal
1-1/2 Cups white sugar
1-1/2 Cups Brown Sugar
3/4 Cups butter or margarine
3 eggs
2-1/4 Cups Flour
1-1/2 Teaspoon cinnamon
3/4 Teaspoon salt
1-1/2 Teaspoon baking soda

Topping:
1 Stick margarine or butter
1 Cup Brown Sugar
3 Tablespoons Milk (add more if the mixture is too thick)
1 Small Bag of Coconut
1 Cups chopped pecans

Directions:

Pour boiling water over oats and set aside.

Mix sugar and egg mixture with flour mixture. Mix well. Add the oatmeal and beat well. (Mixture is very runny, so don't panic.)

Pour into greased and floured pan (9X13). Bake 350 degrees for about 35 minutes. Until center springs back.

Topping:

Beat first three ingredients one minute. Add coconut and pecans and mix.

Spread over warm cake (right out of oven works best). Place under broiler until lightly browned. (Watch carefully or it will burn)(I usually put the cake pan on the lowest rack while it's toasting to avoid burning..... and.........don't leave the oven while during this process.)

When Larry and I were first married he was in the Army. After serving in Korea for a year he was transferred to Fort Sill in Lawton, Oklahoma. It was the first time we set up housekeeping as husband and wife. We lived in a little flat with "early Indian" furniture and it was the a great time in our marriage. I worked for Civil Service on Post doing payroll for Reservists from Ft Chaffey, Arkansas. We had a few times when our group got together to socialize and one of the girls in the office brought this cake. It instantly became my favorite dessert and has since become one of the Schenewerk Family's favorites. Absolutely delicious!
