Leia's Banana Bread Recipe

2 c. All Purpose Flour
1 1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/4 tsp. Ground Cinnamon
1/8 tsp. Ground Nutmeg
2 Beaten Eggs
1 1/2 c. Mashed Bananas (4 medium ripe)
1 c. Sugar
1/2 c. Melted Butter - 1 Stick
1/4 c. chopped Walnuts or Chocolate Chips (optional)

Grease bottom and 1/2 inch up sides of 9x5x pan. (or spray)

Combine dry ingredients. Make a well in center of dry ingredients, set aside.

Combine eggs, bananas, sugar and melted butter. Add this mixture all at once to flour mixture. Stir until moistened. Batter will be lumpy.

Fold in nuts or chocolate. Spoon into prepared pan.

Bake in 350 degree oven for 50 to 60 minutes until wooden toothpick inserted near center comes out clean. If necessary, cover loosely with foil the last 15 minutes of baking to prevent overbrowning.

Cool in pan on wire rack for 10 minutes and then remove from the plan. Cool completely.

Wrap (Leia uses waxed paper and tin foil) and store overnight before eating or slicing. Leia says that they eat it RIGHT AWAY.
