1 chicken, cut up into 2 legs, 2 wings, 2 thighs, and 2 breasts
1 1/2 rice
3 T. olive oil
1/2 onion, finely chopped
2 garlic cloves, finely chopped
1 can tomato sauce
2 c. chicken broth
salt and pepper
1 tsp. oregano
1/2 cumin

Directions:
Directions:
In a Dutch oven, brown the chicken in the olive oil. Season as directed. When chicken is brown, add the rice and stir until rice slightly firm. Add the tomato sauce, chicken broth, and enough water to cover the mixture for simmering.

When the mixture comes to boil, lower heat and simmer for about an hour, until all the liquid cooks off and the rice is done. The rice should be fluffy with no liquid. Do not stir the rice when it is cooking or it will get soggy. If there is a slight burn to the rice on the bottom of the Dutch oven; all the better!

This is the most loved, all time favor of the entire family. Grandma usually served it with her lettuce and tomato salad. Do not be fooled by this seemingly ease to make recipe. It actually takes practice to make it last like her cooking. After a lifetime of attempt, I have not been able to recreate this fantastic taste.
