1 lb. pork tenderloin
3/4 cup panko bread crumbs
2 garlic cloves, minced
2 T. chopped fresh parsley
1 T. each, chopped fresh rosemary and thyme
1 T. olive oil
2 T. Dijon mustard
1/4 t. each, salt and pepper

Directions:
Directions:
Preheat oven to 400º

Combine panko, seasonings and oil. Pat dry pork. Coat pork with mustard and roll in crumb mixture. Transfer pork to oiled rack in roasting pan. Roast 35-45 minutes. Let stand 10 minutes before slicing.
