3 cups potatoes (~3 medium)
2 cups water
2 teaspoons salt, divided
3/4 cup onions, chopped
2 tablespoons flour
2 cups milk
1/4 teaspoon pepper

Directions:
Directions:
Peel & dice the potatoes. Place them in a pot with enough boiling water to cover. Add 1 teaspoon salt. Reduce the heat to a slow simmer; cover and simmer for 15 minutes or until the potatoes feel soft when pierced with a fork (fork tender); then drain. Mash the potatoes until they're about the size of a pea.
Meanwhile, cook the onion in heated margarine for 3 minutes or until translucent. Sprinkle with flour and stir for 1 minute. Gradually stir in milk and cook, stirring frequently, 5-7 minutes until simmering and thickened. Stir in the potatoes and the remaining ingredients. Cook until heated through.
