1 peru de 4 a 5 kg
2 xícaras de manteiga derretida
400 g de míni cenoura
Folha de louro e pimenta rosa a gosto

Tempero
4 dentes de alho
1 cebola cortada em pedaços
1 xícara de óleo vegetal
1 colher de sopa de sal
1 colher de chá de pimenta-do-reino
3 xícaras de vinho banco seco

No liquidificador bata todos os ingredientes do tempero com 1 xícara de água.
Despeje o tempero sobre o peru, cubra com filme plástico e deixe-o descansar na geladeira de um dia para o outro, regando com o tempero de vez em quando.
Transfira o peru para uma assadeira, amarre as pernas com barbante de cozinha e derrame a manteiga por cima.
Leve ao forno preaquecido a 200 ºC, por 3 horas, regando com a manteiga até dourar.
Verifique se está assado furando com um garfo entre-a a coxa e o peito - se sair um líquido transparente, está pronto. Reserve.
Numa fritadeira, aqueça as cenouras com o caldo da assadeira. Transfira o peru para uma travessa e em seguida arrume as cenouras, as folhas de louro em volta. Salpique pimenta rosa a gosto e leve para a mesa.
