Gingerbread Cookies Recipe

3/4 cup butter
3/4 cup lightly packed brown sugar
1 egg lightly beaten
1/2 cup molasses
3 cups all purpose flour
1 tbsp. ground ginger
2 tsp. ground cinnamon
1/2 tsp. each of ground allspice, salt, and baking soda

Directions:
Directions:
In a large bowl using an electric mixer beat the butter and brown sugar until light and fluffy. Beat in egg, and molasses until blended. In a separate bowl mix together flour, spices, salt, and baking soda. Using a wooden spoon, gradually mix the flour mixture into the butter mixture until just blended. Form into a ball and refrigerate for 30 minutes. Preheat oven to
350 º F. On a floured board roll out dough and cut into shapes using cookie cutters.
Bake for 7 minutes.
Cool on a rack and decorate with icing and smarties.

These are Andrew and Alex Potts favorites. To achieve a milder cookie for them, their Grandma reduces the ginger by at least a half. For a milder flavour use fancy or cooking molasses instead of black strap or dark molasses.
