3/4 teaspoons baking powder
3/4 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 cup sugar
3/4 cup vegetable oil
2 large eggs
1/4 cup crushed pineapple
1 1/2 cups shredded carrots

Directions:

Preheat oven to 35O degrees. Using a medium size bowl, mix vegetable oil, sugar and eggs until well blended. Add dry ingredients mix well. Add carrots and pineapple and mix until well blended
Frosting;
1/2 cup softened butter
2 cups powdered sugar
4 tablespoons of whipping cream
1/2 teaspoon ginger
(Add more whipping cream if needed to get the right consistency

Using a medium size bowl mix butter , powdered sugar and ginger and whipping cream until right consistency
