2 1/2 c. brown sugar
2 1/2 c. self-rising flour
3/4 c. unsalted butter
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. Penzey's sea salt
1/4 tsp. Penzeys allspice
1/2 tsp. Penzeys cinnamon (topping only)
1 c. milk in which juice of 2 lemons is added 1 hour before using.
2 large eggs, beaten
1 tsp. Penzeys vanilla extract

1. Whisk together the sugar, flour, baking powder, baking soda, allspice and sea salt.
2. Cut in butter until crumbly and remove 1 cup for topping.
3. Stir in rest of wet ingredients and pour into a well-greased 9"x13"x2" pan, sprinkling top with the cup of reserved topping. Sprinkle a 1/2 tsp. cinnamon on top, also.
4. Bake in a pre-heated 350 º for 30 minutes or until toothpick comes out clean.

I dedicate this recipe to my dear friend, Mary Budney who called me just as I was ready to put the picture on top. We talked for over an hour and afterwards I thought- I need to add a little cinnamon to the top of this cake. There is always a reason to talk to a friend when they call! Love you Mary!
