1 couve-flor, média, limpa e cozida
2 xícaras de leite integral
1 xícara de ricota
2 colheres de chá de sal
1 pitada de noz-moscada ralada
1 cebola média ralada
4 colheres de sopa de farinha de trigo
0.5 molhe de espinafre
4 gemas
1 colher de sopa de maisena
5 colheres de sopa de manteiga
0.5 xícara de creme de leite

Bata no liquidificador a couve-flor, 4 colheres de leite, a ricota, 1 colher de chá de sal e a noz-moscada. Reserve
Numa panela refogue a cebola no azeite, junte a farinha de trigo e doure-a. Adicione o creme de couve-flor e cozinhe até encorpar. Tire do fogo.
Com a mistura ainda morna, modele os quenelles com 2 colheres de sopa. Reserve.
Bata no liquidificador o espinafre, o restante do leite e do sal, as gemas a manteiga e a maisena. Despeje a mistura em uma panela com o creme de leite. Cozinhe até obter um creme.
Espalhe o creme de espinafre no prato e coloque as quenelles. Decore com as folhas de espinafre frito.
