1/2 cup honey
1/2 cup molasses
3/4 cup brown sugar
1 egg
1 Tbsp lemon zest
2 3/4 cup all purpose flour
1/2 tsp baking soda
1.5 tsp ground cinnamon
1 tsp each of ground cloves, allspice and nutmeg
1/3 cup diced candied citron

Icing
1 egg white
1 cup confectioners sugar
fresh squeezed lemon juice to taste

Directions:
Bring the molasses and honey to a boil and then stir in the brown sugar, egg, lemon juice and zest. Set aside.
In a large bowl, stir together the flour, baking soda, and spices. Add the molasses mixture to the dry ingredients and mix well. Stir in the citron. Cover and chill in fridge overnight to mellow flavours and cool the dough so you can handle it.

Preheat the oven to 350. Grease cookie sheets or use parchment paper or silicon liners. Roll out the dough about one third at a time on lightly floured surface to about 1/4 inch thick. Cut into small diamond shapes and place 1 inch apart on the cookie sheets.
Bake for 10 to 12 minutes until no imprint remains when touched lightly. Brush the icing over the cookies while they are still hot and quickly remove them to a wire rack for cooling. Store in airtight container with a slice of apple it mellow.

Icing:
Beat the egg white by hand then add the icing sugar and lemon juice. Brush onto the cookies with a pastry brush.
