1 pound Italian sausage ( I use half hot and half mild)
2 14oz. cans beef broth
1 14 oz can Italian stewed tomatoes
1 c. sliced carrots
1 14 oz can great northern beans, undrained
2 small zucchini, cubed
2 c spinach, rinsed and torn
1 clove garlic, minced
1/4 tsp each, salt and pepper

In a skillet, cook sausage, onion, garlic. Remove from heat and drain. Stir in broth, tomatoes and carrots. Season with salt and pepper. Reduce heat, simmer for 15 min. Stir in beans with liquid and zucchini, and simmer another 15 min., or until zucchini is tender. Finally add spinach, and cook until wilted. (approximately 5 minutes).

This is a good base recipe. Can be eaten as in, or you can add other ingredients. I like to add zucchini, yellow squash, and fresh greens instead of frozen. I also have added gnocchi, if you like a noodle with your soup.
