POTATO SALAD:

3 C. unpeeled/boiled/cubed/chilled new Potatoes. 1 T. finely chopped Onion, 2 hard-boiled Eggs/chopped, 1/2 tsp. Salt, dash Pepper, 2/3 C. Sour Cream, 2 T. Mayonnaise, 2 T. cider Vinegar, 1 tsp. Mustard, 1/2 tsp. Celery Seed & 1/3 C. Sweet Pickle Relish.
In lg. bowl, combine potatoes, egg whites, onion, salt & pepper. In small bowl, combine sour cream, relish, mayonnaise, vinegar, mustard & celery seed. Pour over potato mixture: toss lightly. Refrigerate before serving, garnish with grated yolks. Serves 6.

HOT POTATO SALAD:
Cooked/diced Potatoes, 4 slices cubed Bread, 1 large diced Onion, 1 diced Green Pepper, 1 jar pimentos, 1/2 lb. Velveeta Cheese, 3/4 C. Milk, 1 stick cubed Margarine, Salt & Pepper.
Mix everything together. Bake at 350 for 45 minutes.

APPLE WALDDORF SALAD: 3 Apples, 3 stalks Celery/chopped, 1/3 C. Raisins, 1/2 C. Mayo, 1/2 C. Yogurt, 1 tsp. Nutmeg, Lemon juice, Almond or Walnuts. Combine mayo, yogurt & nutmeg in a lg bowl. Set aside. Core & chop apples, Add to mayo mixture along w/remaining ingredients. Refrigerate 3 hours.
