1.5 lbs Ground Beef (Chuck or Sirloin)
1.5 C Long Grain White Rice (Carolina brand)
1 28oz can diced tomatoes
1 medium Green Pepper diced
1 medium onion diced
salt & pepper to taste
Red pepper flakes (optional)

Directions:
Directions:
Cook rice according to package directions.

Preheat oven to 350º

1. Brown meat in large pot, spoon off the fat.
2. Add peppers and onions, salt & pepper. Cook until just done, don't over cook.
3. Add rice and tomatoes to meat mixture. Mix well over medium-low heat to warm through.
4. Turn meat and rice mixture into a 9x13 pan sprayed with Pam. Cover with foil and bake 20-30 minutes until hot.

Optional: To add some heat to the dish, add hot pepper flakes to taste before baking.

Note: This is also the stuffing for Baked Stuffed Peppers.

Whitney was in third grade and needed to contribute a favorite family recipe to a class project. Whitney wanted Grandma's "Easy Rice" so Mom hand-wrote her recipe for Whitney. I still have her hand-written note.
