GERMAN POTATO SALAD:

6 med. Potatoes/boiled in jackets, 6 slices Bacon, 3/4 C. chopped Onion, 2 T. Cornstarch, 4 T. Sugar, 1 1/2 tsp. Salt, dash of Pepper, 3/4 C. Water & 1/4 C. Vinegar. Peel potatoes & slice thin. Fry bacon slowly, then drain on paper. Cook onion in bacon fat until brown. Blend in cornstarch, sugar, salt & pepper. Cook over low heat, stirring constantly. Boil 1 minute. Stir in carefully, potatoes & crumbled bacon bits. Remove from heat, cover & let stand until ready to serve. 6-8 servings.

MASHED POTATOES:
Peel potatoes, cube - boil until fork tender. Mash potatoes, add butter, salt, pepper & milk to taste & texture you like. Can add 1 can cream of chicken soup, sour cream, onion & cheddar cheese.

STUFFED BAKED POTATOES:
Bake potatoes at 350 for 1 hour. Cut off top of potato & scoop out middle - mash & add little onion, salt, pepper, cheddar cheese &/or sour cream. Mix good. Stuff the potato shell, put little paprika on top. Bake until warm & serve. (freezes well).

When I make stuffed potatoes, I make enough to freeze if I have company. Saves a lot of time and everyone loves them. Just thaw & heat.
