1 cup plus 3 tablespoons low sodium chicken broth
1 cup skim milk
1/2 cup whole milk
1/2 cup quick grits
1 teaspoon salt
1 1/2 cups shredded sharp cheddar cheese plus more for garnish
1/2 pound bacon diced
1 pound medium shrimp, peeled and deveined
1 cup chopped green onions
1 teaspoon green pepper sauce or to taste

To prepare grits:
Bring chicken broth and milk to a boil in a large saucepan. Stir in grits and salt. Return to boil. Cover and cook 5 minutes until thickened stirring occasionally. Stir in cheddar cheese. Keep warm.
To prepare shrimp:
Cook bacon in skillet until semi-crisp. Drain all but 2 tablespoons of fat. Add shrimp and 3/4 cup of green onion; cook until onions are tender and shrimp turn pink. With heat still on high, add 3 tablespoons of chicken broth and continue to cook until broth is reduced by half. Season with green pepper sauce. Serve shrimp mixture over warm cheese grits. Garnish with remaining 1/4 cup chopped green onions and cheddar cheese.

First had shrimp and grits while working in Clarksdale, MS. The restaurant was called "Rust.". Loved the dish and have searched high and low for a copycat recipe. This is the closest one I found.
