Ingredients: 1 cup plus 3 tablespoons low sodium chicken broth 1 cup skim milk 1/2 cup whole milk 1/2 cup quick grits 1 teaspoon salt 1 1/2 cups shredded sharp cheddar cheese plus more for garnish 1/2 pound bacon diced 1 pound medium shrimp, peeled and deveined 1 cup chopped green onions 1 teaspoon green pepper sauce or to taste

Directions:To prepare grits: Bring chicken broth and milk to a boil in a large saucepan. Stir in grits and salt. Return to boil. Cover and cook 5 minutes until thickened stirring occasionally. Stir in cheddar cheese. Keep warm. To prepare shrimp: Cook bacon in skillet until semi-crisp. Drain all but 2 tablespoons of fat. Add shrimp and 3/4 cup of green onion; cook until onions are tender and shrimp turn pink. With heat still on high, add 3 tablespoons of chicken broth and continue to cook until broth is reduced by half. Season with green pepper sauce. Serve shrimp mixture over warm cheese grits. Garnish with remaining 1/4 cup chopped green onions and cheddar cheese. |

Notes: First had shrimp and grits while working in Clarksdale, MS. The restaurant was called "Rust.". Loved the dish and have searched high and low for a copycat recipe. This is the closest one I found.
