A fistful of long-stem mint, washed
A few extra stems, for garnish
2 cups water
1 cup sugar
crushed ice
bourbon

Directions:
1. In a pot boil the water, then add the mint, pressing the stems and leaves with a wooden spoon so they release their essence. Leave the mint to steep 3-5 minutes, but not too long or it will begin to grey.
2. Strain the tea into a pitcher, then stir in the cup of sugar: this is your syrup base.
3. To make the julep: take a julep sized glass (10 oz.) and fill to the top with crushed ice. Add a jigger (1 1/2 ounces) of bourbon, then fill to the top with mint syrup. Stir, and add a mint stem to garnish.

I asked Aunt Laura for her mint julep recipe, probably before the Kentucky Derby of 2007, and she graciously provided it to me. With regard to how much mint to use for the syrup base, she described it as how it would feel to hold a full bouquet in one hand.
