Comfort Chicken and Dumplings Recipe

1 fresh whole Chicken (washed and giblets removed)
1 bunch Celery, cut
1 bag Fresh Baby Carrots
1 large Yellow Onion, diced
2 bay leaves
2 tsp Poultry Seasoning
1 TBSP Thyme Leaf
1 TBSP chopped Fresh Garlic
1/2 cup Chicken Base
1/2 bunch Parsley, chopped
1 gallon Water
Salt and Pepper to taste

Dumplings
2 1/4 cup Bisquick Mix
1/3 cup Milk
1/3 cup broth from Chicken

Directions:
Directions:
Wash chicken and put into large pot. Add all ingredients except for Dumplings and cook over medium heat until slow boil. Let cook several hours until chicken start to pull off of the bone. Carefully remove chicken from broth leaving vegetables in pot. Let stand to cool a bit and then remove chicken from bones. Add the chicken back to the broth. Reserve 1/3 cup broth off to the side. Mix together 2 cups cornstarch and 1 cup of water to make a "slurry". add to broth stirring until thickened.

Dumplings:
Mix Bisquick, water and chicken broth until sticky.
Drop by large spoonfuls on to thickened Chicken mixture.
Reduce heat , cook uncovered for 10 minutes the cover and cook for 10 minutes longer.
Makes 10 dumplings
