1/2 cup chopped carrots
1/2 cup chopped celery
4 1/2 cups chicken broth
1/2 cup chopped zucchini
2 Tablespoons butter
2 Tablespoons finely chopped onion
1/2 cup flour
1 cup shredded cheddar cheese
1/4 cup Parmesan cheese
10 drops hot sauce
1/4 teaspoon white pepper
1 1/2 cup cream
1/2 cup white wine

Add carrots and celery to 1/2 cups chicken broth in 2 quart saucepan. Bring to a boil, cover and simmer 10 minutes. Add zucchinis, cover and simmer for another 5 minutes. Melt butter in a 5 quart saucepan over medium heat, add onion and saute until transparent. Blend in flour and cook for 5 minutes, stirring constantly, being careful not to brown.Slowly stir in remaining cups of chicken broth into flour, whisk over low heat until sauce thickens. Add cheeses and stir until melted. Season with hot sauce, salt, pepper and wine.Stir in cream prior to serving.
