Ingredients: Meatballs 1 to 2 pounds of ground lean beef One egg 3 cloves of minced garlic Juice of one half lemon Minced parsley Teaspoon of ground oregano Quarter cup of shredded Parmesan cheese salt pepper
Soup: 2 tablespoons of tomato paste 7 cups of beef broth or 14 cups reduced in half for a really hearty stock Dash of f salt and pepper Parsley 2 bay leaves 10-15 whole peppercorns 1 onion coarsely diced 4 stocks of celery Roughcut quarter cup of carrots One cup of sliced cabbage Parmesan cheese for topping

Directions:Add all the meatball ingredients together and mix well. Use a small ice cream scoop to create meatballs or roll small portions of the mixture into small meatballs. In a large Dutch oven or cast-iron pot brown the meat balls in a little bit of Canola oil. Make sure the meatballs are brown but it does not matter if they're cooked through. They will finish in the soup. Once all the meatballs have been brown add the 2 tablespoons of tomato paste to the pot. Then add the Beef stock and herbs. Bring to a boil and cook for 10 to 15 minutes. Next, add all the vegetables and simmer for 10 to 15 minutes. Last add the meatballs and cook another 5 to 10 minutes to cook the meat balls through. Serving in bowls with shaved or grated Parmesan cheese on top. |
