1 9 inch pie shell
3 tbsp butter
1 cup sugar
3 eggs, separated
1 tsp lemon rind
1/3 cup lemon juice
4 tbsp flour
pinch salt
1 1/3 cup milk

Directions:
Directions:
Cream butter and sugar.
Add egg yolks, one at a time; beat after each addition.
Add lemon rind, juice, flour and salt.
Add milk and mix well.
Beat egg whites until stiff; fold gently into lemon mixture.
Bake in a 9 inch pie shell for 35 to 40 minutes at 400 degrees.
