3 Pound Beef Roast, shoulder or rump
2-3 tsps flour
1 large onion
3 stalks celery
1 large bell pepper
1 Tbl cumin
1 tsp garlic salt
1/4 cup Worchestershire sauce

Directions:
Directions:
Cut roast in 1 inch cubes or strips, removing any large pieces of fat. Sear cubes in a little vegetable oil, careful not to crowd the pan.

After all meat is seared, sprinkle flour into pan drippings, adding additional oil if necessary. Brown flour, stirring constantly.

Add back beef, and add vegetables, stirring well. Add 1-2 cups of water, cumin and garlic salt. After 30 minutes, add Worchestershire sauce

SImmer for 1 to 1.5 hours, adjusting seasoning as needed.

Serve over white rice
