4 cups cooked chicken
4 cups cooked wild rice
2 cups blanched carrots, diced
10 medium mushrooms, sliced and sauteed
10 shallots, chopped and sauteed
1 sweet yellow onion, chopped and sauteed
24 oz artichoke hearts
2 cups cream of chicken soup
1/2 cup sherry
3 cups grated mozzarella cheese
grated parmesan on top

Directions:
Directions:
Cover bottom of large casserole dish with the wild rice. Mix carrots, mushrooms, shallots, onions & artichoke hearts with soup. Fold in sherry; then fold in chicken and mozzarella. Mix well; pour over rice. Sprinkle with parmesan. Bake at 350º.
