12 oz semi-sweet chocolate chips
1 c butter, softened
3/4 c packed brown sugar
1/2 c sugar
1 egg
1 tsp vanilla
1 c flour
1 tsp baking soda
1/2 tsp salt
3 c oats
1 c chopped walnuts (optional)

Directions:
Directions:
Preheat oven to 375º. Beat butter and sugars at medium speed until creamy and lightened in color (about 4 min). Add vanilla and egg and mix to incorporate. Mix in dry ingredients followed by the chocolate chips.

Bake 8-9 minutes

I make a double batch and freeze the cookie balls to bake (or eat) later. Bake the frozen dough for 13 min.
