6 potatoes, cooked
1/2 cup chopped onion
1/2 cup diced celery
3 hard cooked eggs
4 slices bacon
2 eggs, beaten
2 tbsp flour
1/4 cup vinegar
1/4 cup sugar
1 cup water
Directions:
Directions:
Place cooked diced potatoes, chopped onion and diced celery into a large bowl.
Dressing: In a small bowl mix egg, sugar, flour and vinegar into a paste. Then add water and stir. Fry Bacon until crisp, remove bacon from pan. To fat in the pan, add the egg/flour mixture and stir. Cook over low heat until mixture thickens.
Pour over hot potatoes. Refrigerate and serve cold. Garnish with crumbled bacon and slice hard cooked eggs.
If more dressing is needed add a mixture of sour cream and mayonnaise before serving.
