Nanny's Pineapple Cream Recipe

1 1/2 cups graham wafer crumbs
1 ½ cups icing sugar
½ cup melted butter
1 can drained crushed pineapple
½ cup soft butter
250 ml whipping cream or Dream Whip
2 eggs (or 100ml of pasteurized egg substitute)

Directions:
Grease 8x8 inch pan. Combine 1.5 (1 1/2) cups of graham wafer crumbs and melted butter. (You just need enough butter to get crumbs pressed down into pan.) Mix another 1/2 cup of soft butter and 1.5 cups of icing sugar and cream together. Add 2 eggs. Beat until fluffy. Then put on top of the graham base.
Drain 2 small cans of crushed pineapple well and put on top of butter layer. Whip one pack (250ml) of whipping cream and put on top of pineapple. Sprinkle a few graham wafer crumbs on top if desired. Refrigerate overnight.
Optional: Use 100ml of pasteurized egg substitute in the small carton in place of the raw eggs (available near eggs in supermarket).
