3 cups all-purpose flour
1/4 cup instant nonfat dry milk (optional)
3 generousTablespoons soft butter, margarine or shortening (I used 2 1/4T coconut oil)
1 1/2 teaspoon salt
1 package active dry yeast (1 1/2 t)
a sprinkle of sugar
1/4 cup lukewarm water
2/3 to 1 cup lukewarm water.

With your hands, crumble the flour, salt and fat together. The milk powder too if you're using it.

In measuring cup, add a scant sprinkle of sugar, the first amount of water, and then your yeast. Give it a little stir, scraping any yeast down into the water. Let it do its thing for 10 minutes.

Make a little hole in your flour mixture, and put your yeast mixture into it. Blend it until it starts to clump a bit. Then add the rest of your water a little bit at a time until your dough is formed into a loose ball. Turn dough out onto a well floured surface and knead 9 or 10 times. Place dough in greased bowl and cover; let it rise in a warm place for about 1 1/2 hours. I like to put mine on the top rack of the oven with the light on, placing a shallow pan of hot water on the bottom rack for added heat.

Turn dough onto a well-floured surface and punch down. Toss until no longer sticky. Make a smooth ball. Cover with the bowl and let it rest 15 minutes.

Shape your loaf, place seam side down in a well-greased 9x5 loaf pan. Cover and let rise in warm place for about an hour. Place in preheated oven set at 375 about 35 to 40 minutes.
