4 beets, peeled, cooked and sliced
1/4 c minced shallots
2 tbsp olive oil
1 tbsp balsamic vinegar
1 tbsp red wine vinegar
salt and pepper to taste
1/4c crumbled goat cheese

Directions:
Directions:
Peel and cook beets until tender.

Whisk together shallots, oil and vinegars, and salt and pepper. Pour vinaigrette over the beets and top with goat cheese.

These are yummy! You've got to try them.
