Olive Oil
2 onions, chopped
2 cloves garlic, minced or pressed
4-5 stalks celery, preferably with leaves
1/2 c sliced almonds
2 Tbsp butter
2 c brown rice (such as Uncle Ben's)
1 quart chicken broth
1/2 bunch parsley
1 bunch scallions

Directions:

Coat bottom of large pan with olive oil. Cook onion and garlic over low heat until softened. Chop celery stalks (reserve leaves) and add to pot, stir and cook 1-2 minutes. Add butter and almonds to pot, stir occasionally until butter is melted cook for several minutes. Add uncooked rice, stir and saute over low heat for several minutes. Add stock, bring to a boil, reduce heat, cover, and simmer for 20 minutes (or per rice cooking directions). Stir in chopped scallions, parsley, and celery leaves.
