Ingredients: 1 1/2 C. Bacon,Ham or Sausage Quanity can vary depending on meat selection. 6 fresh eggs 1 2/3 Cup WHOLE milk 1/4 salt 3/4 cup all purpose flower 3/4 C. Grated cheese. Cheddar or your favorite.. 1 half onion diced fine 1/4 cup of chopped green onions 1/4 stick of Butter Dash of Cayanne Pepper

Directions:Take a medium sized heavy Dutch oven (Le Crusett is ideal) and liberally butter all sides of the pan. I melt the butter and then roll it around in the pan to coat.
Take your bacon or whatever meat you choose and cook it until it's done if required. Drain off the fat (bacon grease) if any and set aside. If you are using ham this will not be necessary. Toss in your chopped onions at the end and cook until tender and translucent.
In a blender or food processor combine eggs, milk,salt, cayenne pepper and flower and blend until smooth, 30 seconds or so. Place in a bowl and fold in the cheese and the green onions..
Add the meat to the Dutch oven and pour in the mixture. Place in a preheated 400º oven for 30 minutes until it puffs up and is golden brown. |

Notes: Supper,supper,supper simple and is a base soufflé for any type of meat. Feel free to add spices, veggies and vary the meat ingredient. Prosciutto, smoked bacon, various types of sausage all work well. Remember that. If your meat is greasy render off the fat before adding to the casserole dish.. Enjoy!
