For 6 – 7 POTATOES USE:

1 Tablespoon OIL [Older generations used regular cooking oil; olive oil not available in USA.]
1/3 Cup WATER
1/3 Cup VINEGAR [Earlier generations used Cider Vinegar as white vinegar not available.]
½ ONION, sliced in largish pieces [I always do them very thinly sliced myself]
Salt & Pepper to flavor.

~ Boil Potatoes gently, drain & while cooling peel the skin off as soon as possible to do so [when you can handle the heat!].
~ Cool, then slice Potatoes thinly, not too thin [sugar cookie width].
~ Place Potatoes in a large rather shallow bowl.
~ When still a little bit warm, gently fold the three liquids One at a Time,
into the Sliced Potatoes, in the Following Order:
#1. OIL , #2 WATER, #3. VINEGAR
~ Add the 1/2 Onion sliced
~ Salt & Pepper to taste.
