Ingredients: Cheese Sauce; 2 tablespoons Butter 2 1/2 Tablespoons Flower 2 C Whole Milk 1/2 teaspoon salt 1/8 teaspoon pepper 1 8oz package Velveta Cheese shredded
Other; 3 tablespoons butter 12 eggs beaten 1 C diced Ham, bacon, sausage or whatever sounds good I like the Ham. 1/4 cup Green Onions chopped fine.

Directions:Make the cheese sauce. In a heavy pot melt the butter and add the flower and cook for a minute or so. Slowly add in the milk and bring to a boil to insure full thickness. Add the cheese, salt and pepper and stir until cheese melts. Set aside.
In a very large skillet or large heavy pot melt the remaining butter and add the eggs. Scramble until firm and then fold in the cheese sauce. Pour mixture into a 13X9X2 inch greased (with butter) casserole dish and evenly spread the ham and chopped green onions over the top.
You are supposed to cover and refrigerate overnight but if you cannot let sit for an hour and get to room temperature. To finish, bake in a 350º over for about 30 minutes until topics golden brown. |

Notes: This is the ultimate basic breakfast casserole. It is delicious and can be modified a 1000 different ways and served on anything from stand alone to toast to English muffins. Ham and bacon are my to favorite.
