Ingredients: Glaze; Orange juice catchup honey Fresh ginger – three or 4 inches sliced round Tamarind paste or sauce
Chicken Rub; Allspice Brown sugar Chili powder Black pepper and salt

Directions:In a pot add:
Orange juice catchup honey Fresh ginger – three or 4 inches sliced round Tamarind paste or sauce
Simmer on medium heat and reduced by about a third. When reduced pour the liquid through a strainer to remove the solids and set aside.
Prepare a spice for your chicken wings. Combined the following in a mortar and pistol.
Allspice Brown sugar Chili powder Black pepper and salt
Work thoroughly together. Lightly brush your wings with canola and sprinkle over both sides of your chicken wings.
On a hot grill using any type of Fruitwood for smoke grill your wings. Start by cooking them over direct hot heat to put a crust on them and move to indirect heat to finish. When the wings are cooked place them in a bowl and drizzle your tamarind sauce over the wings and toss to coat.
For a variation you can add any type of hot pepper to the sauce. An habanero works well but are extremely hot so be careful. |
