3/4 cup of diced onion
Three quarters of a stick of butter
2 cans of plain diced tomatoes.
1 large can of plain tomato juice.
3 tablespoons of sugar.
Half tablespoon of fresh ground pepper
3 chicken bullion cubes
1 cup Dry sherry
1 1/2 cups Heavy cream
1/4 cup of diced parsley
1/4 cup diced basil leaves

Directions:
Directions:
In a heavy pot Sauté the onions in butter until translucent. Add the sugar, chicken cubes, two regular cans of diced tomatoes and the large can of tomato juice, fresh ground black pepper and bring to a simmer for about 30 minutes. Add Sherry, heavy cream and herbs and simmer for 20 minutes and serve.

This is very simple and really hearty. The cream and sherry add huge flavor and richness to this soup. If you want to give the soup a velvety texture use a hand blender to smooth out the texture.
