Ingredients: 1 1/2 c. unsalted butter (softened) 1 c. granulated sugar 1 c. brown sugar 2 large eggs 2 tsp. vanilla 2 1/2 c. unbleached all-purpose flour 2 c. graham cracker crumbs 1 tsp. salt 1 tsp. baking soda 12 oz. chocolate chips 25 large marshmallows

Directions:Cream the butter, sugar and brown sugar in a stand mixer. Add the eggs one at a time. Add the vanilla and mix. Sift together the flour, baking soda and salt. Add the graham cracker crumbs and mix well. Add the flour mixture to the butter mixture in three increments, mixing well after each and scraping the sides of bowl in between. Add the chips and mix well. Refrigerate the dough about 30 minutes. Preheat the oven to 375º. Roll the marshmallows into a ball. Line large cookie sheets with parchment paper. Using an ice cream scoop size scooper, scoop dough and flatten to about a 3 inch circle and put a rolled marshmallow in center of dough. Wrap the cookie dough around the rolled marshmallow and place about 2 1/2 inches apart on parchment paper lined sheets. Bake 10 minutes in preheated oven, rotating rack for even browning. Let cool on sheet for a couple minutes before transferring to cooling rack. |
