graham cracker crumbs
1 lb. small curd cottage cheese or ricotta cheese
2 (8 oz.) pkgs. cream cheese
1-1/2 c. sugar
4 eggs, slightly beaten
1/3 c. cornstarch
2 T. lemon juice
1 tsp. vanilla or almond extract
1/2 c. margarine, melted
1 pint sour cream

Grease 9 in. springform pan and dust with graham cracker crumbs. Sieve cottage cheese into bowl. Add cream cheese. Beat at high speed until creamy. Beating, blend in sugar and eggs. Reduce speed to low. Add cornstarch, lemon juice and vanilla. Beat at low speed, until blended. Add melted margarine and sour cream. Blend on low speed. Pour into pan. Bake at 325 degrees for 1 hr. and 10 min. Turn off oven and let cake stand in oven 2 hrs. Remove from pan by removing sides. Cool and refrigerate.
